This was actually pretty quick to put together using shredded chicken we got at Costco. For the tortillas, I used Mission Flax Seed and Blue Corn Mix Artisan Style tortillas. I think they were a bit dryer than a normal tortilla, but microwaving them between two wet paper towels did help with breakage. Paired with homemade pico de gallo and (not homemade) Spanish rice, it was a delicious and filling dinner!
